Whenever possible, I've recently been really in to preparing whole fish or making stock and defleshing from carcasses. Pretty amazing how much more efficient this is, especially for our rockfish.

After making stock these perfectly round spheres fall out of the head. Pretty sure it's two per head. The exterior is dense, chalky and white and can be scraped off. In the center is a clear glass-like sphere. They are ~0.5 cm diameter depending on fish size. I've extracted otoliths before, but never saw these before making stock and am not sure exactly where they are located in the head.

Anyone know what part of a fish's anatomy this is? My google search gave nothing.

Yup, that's what I'd say.
Pop the eyes out, squeeze the soft stuff off them and that is what is inside, like a plastic bead.

Eye lens was my first thought too. That is probably it. I've dissected the eyes before, but just from completely raw fish. These seem too big and the exterior is very different from raw but both could be due to my poor estimation and the cooking process.

Thought there might be something else in there I had no idea about.

Soup. After cooking I pick out the big parts, strain and then add some salt. Use it just like chicken broth in soup recipes. There is some rich, fishy goodness in there. Recovered meat gets thrown back in to the soup near the end. Variations of "bulit" stew, red curry, tom kha, and green pozole are current favorites. I love making big batches and freezing.
