Mahi on the grill

This can be done at home on the grill or a boat grill(Tastes better on the boat)

Mahi filet cut into generous portions.
Place tin foil over grill and fold edges to make a pan.
Melt 1/2 stick of butter in your redneck pan and add one small can of pineapple juice.Add a shot or two of Mango rum or whatever your drinking to the mix.When butter is melted place filet chunks in skin down.
Spinkle Tony Checharras or YOUR favorite seasoning on the filets.
Cook on medium heat till filet turns white 3/4 through and flip filet.Cook till filet is white.
You can raise temp to reduce rum,butter and juice to make a glaze.

Add a few Nargarittas and all is good!
