poll-halibut versus white seabass

which do you think TASTES better. not which you would rather shoot, since shooting halibut can be rather anti climatic. not which one you would rather tell your friends about. not which one looks better on the plate. i like to cook whiteseabass for guests more than halibut because the massive thickness of the fillet is impressive, but i think in any cooked dish, halibut wins hands down in flavor. the only exceptions are seabass collars, and sashimi which i think might actually beat it. its hard to say since i havent sashimid many of the halibut i shot, and ive never cooked a halibut collar. fillet vs fillet, cooked witht he same recipe, what fish do you prefer....

i realize there is no right or wrong answer, as everyone is entitled to thier own opinion, and everyones style of cooking varys, im just curious how many people are with me on the halibut wagon.

i just knocked down a couple panko crusted halibut tacos from year old meat and it still think its as good as the panko wsb i had recently. and that wsb was freakin GOOOD.

Based on my two most recent meals (one of each) I'd say halibut, but not by much and not enough samples to say with certainty. Both damn good. So did you kill a flattie today?

its pretty close so far. steve i didnt kill anything at all, it was old halibut from last season. i miss eating them but i got sick of staring at sand all the time so i havent shot one in a long long time. i think wsb is gonna win this one in the long run, but im gonna stand by my flatfish.

that llast big hali I got was dry as hell. I ended up making tacos out of most of it. All the wsb I've eaten as thick maybe thicker than the halibut has been moist, flakey and delicious. I'd never make beer battered tacos out of it.
the last smaller model hali I took may have been the best piece of fish I've ever eaten but all in all I'd say wsb.

I would say sea bass is probably better to me just because I feel like it holds more versatility to cooking variations. But as far as just plain taste if you were to cook them both in something simple like lemon and butter, I think they are equals.

I've done a blind tasting between halibut, croaker, and white seabass. The halibut came out on top of everyone's list...there were about 8 people there.

California halibut has a lower fat content than white seabass and therefore can become dry quickly if even slightly over cooked.

But the thickness of the steaks, and the thickness of the myomeres makes white seabass superior when other differences are compared. Up here people hook and line Pacific halibut. When fresh, they are like a combination of white seabass and California halibut...a halibut taste with thick steaks, and thick myomeres alternating with fat. MMMmmm...

Cooked I cant really tell the difference.
My vote goes for Seabass.
