Fake lobster a la Cobia
Cut fresh or thawed cobia into bite-sized pieces. Boil a pan of water (2-3 quart pot, filled halfway with water) on the stove, with a teaspoon of Old Bay seasoning, a Tablespoon of sugar, and a teaspoon of salt. Lower cobia pieces into the boiling water. Remove each piece once it floats to the top. This will only take a 1-2 minutes. Sprinkle with a tiny bit of salt, and serve with melted butter and lemon.
DAMN was it good - also you could chop it up and use it in a lobster stuffing, or use the chunks in a lobster roll. |
