Cut the head off, gut it, scale it. not necessarily in that order. Then deep fry it. I took some filets to a party that had a lot of brothers and was schooled. Sheep's taste much better with the ribs in.
I cook many fish whole -Snapper, Hogfish, trout, etc... Even make soup with the grouper heads. Sherpa are just too ugly to cook whole and too tasty not to have between bread.

What does sherpa go for a pound on the commercial market anyways? I've never heard of it being bought. I used to see some shady guys selling them at the flea market years ago.

Re: The Sherpa are out to play

RS stands for restricted species, and it has a name on it if its a personal one, this one is for a boat, so instead of name it has the FL numbers

Shooting a mess of illegal sea bream doesnt make you a commercial spearo. Jr and High school kids do it everyday.

Why you busting balls. I have been out of HS along time and I enjoy shooting a mess of Sherpa.
Seems a good place to start commercial spearing while putting some fish on the table and some gas in the boat.

So you were on a commercial trip?.

Ooooooooooooo - that sounds like a GREAT recipe - I'll have to try that. Thanks for sharing that, man
