PanFried Snappa.
Figure on 1/2 to a full lb of fillets per person.Snappa,hog,groupa
2-4oz of fresh ground Pecorino Romano cheese 4oz of seasoned bread crumbs(hopefully Italian) Peanut oil large round skillet Place cheese&crumbs in a plastic grocery bag,add fillets,shake to coat evenly. Heat oil in skillet ,just enough to coat the bottom til it starts to smoke a little.Throw in enough fillets to cover the bottom of the skillet but still allow you to flip them.Cook for 1-2 minutes per side or until as brown as you like . Serve after a small salad of fresh baby greens with olive oil and balsamic vinegar. Side dishes could be 1 veggie such as rapini,greens(collard,mustard)or broccoli and 1 carb like fried potatoes and onions or a thick risotto.Bet there wont be any fish left.
