Pan seared Cobia- "Kicked up a notch!"
Tried this out tonight after not having much in the fridge, with the exception of a few ingredients left over from making a ceviche this weekend. It was awesome!
Very simple and quick! Ingedients: Cobia fillets cut to 1/2-3/4" thick minced serano chiles- seranos have a very distinct flavor and are my favorite. I don't think this would work well with jalepenos. Habeneros would be a good substitute, if you really like a lot of heat! Minced garlic Salt Get the pan as hot as you can get it. Put butter in the pan. Coat the fillets with the ingredients as you like. Sear fillets. 45-60 seconds each side. Squeeze on some lime juice and serve.
