Pelagic marinades
I am just starting to read about how some guy's are prepairing their YT as these fish are showing up in Californa. I have made these two in the past two day's and my family and friends have loved them. Works great on Dorado too.
Juice 2 oranges one lemon and 2 limes add about 1/4 cup of Soy Sauce. 1 tsp red chili sauce like siracha and 2 tbs olive oil. Wisk together and marinade fillets for no longer than 20 min before grilling. This works especially good on YT collars. Juice of 2 lemons, 1/8 cup cumin 1 clove mashed garlic and 2 tbs olive oil. Mix until you have a nice even thin paste( if you dont, add what you need to taste). Add salt and pepper to taste, and rub all over fillets 20-30 min prior to grilling. Fantastic on WSB as well. |
