Sheepshead (Sherpa) fake crab

OK, the wife and I are big fans of the Sherpa. Sautéed, picatta style, fried, blackened, in Sherpa Stew, etc.

BUT yesterday I made an interesting discovery. I shot a 13" one and didn't want to waste a freezer bag on it, so I tried an experiment. I cut it into 1 inch chunks, boiled some water in a pan with about 1 tablespoon of salt, and dropped the chunks into the boiling water for about 45 seconds. Immediately took it off the heat, let it sit for about 2 minutes, then drained it and patted the chunks dry. Melted some salted butter until the fat was starting to froth/separate (i.e. made "drawn butter"). Tossed the chunks of Sherpa in the drawn butter - AMAZING. Tasted like crab.

I think next time I'll throw the chunks into a sauté pan (very hot) after dipping them in the butter for about 15 seconds to get some caramelization.

Yea, I've been on a trip whereby we caught lobster and grouper and cooked them up on the SS grill. I've got to say....the fresh chunked grouper was much better than the fresh FL lobster. We had the salt in the bottom of a pretzel bag and some butter. BAM! The best after many dives.
