Tidewater/Chesapeake VA Hushpuppies
Because ya just cant have a fish fry without 'em. *Note: The recipes for hushpuppies varies highly by region. This is the one I grew up with. Mix the following: 1 cup of Jiffy cornbread mix 3/4 cup whole wheat flour teaspoon or two of brown sugar 1/2 cup of very finely minced onions teaspoon or two of freshly ground pepper pinch of baking soda pinch of baking powder pinch of garlic powder one large egg While mixing this with a rubber spatula, gently pour milk into the mix in very tiny amounts at a time. By the milliliter if you can. Too much milk and you wont get the proper shape. The consistency of the mix should be very thick and pasty. You could be able to roll the mix like doh in your hand to make perfect spheres. Some people at this point set these to cool in the fridge for a bit. I just go ahead and drop 'em in the oil at this point. Roll the puppie mix into spheres about the size of a ping-pong ball, but not larger than a golf ball. They expand a bit in the oil. Note: in the picture, the mix is sticking to much to my hands - to prevent this, dip your hands in a bit of milk and handle the mix quickly. Dunk these puppies in hot peanut oil. You can use other oils, but I like the flavor peanut oil adds. Get the oil very hot, but not to a boil. Works best with a gas stove, but just fine with a regular stove. You can even use one of those handy deep fryers. Remove the puppies once they are golden brown and place them on a plate with paper towels to soak up a bit of the oil. Best to serve still hot or warm. Enjoy! Try variations on this recipe to your own taste. This is one of those foods you can experiment with to add your own unique style. You can mix lots of things to spice the puppies up a bit. I've seen people mix jalapenos and other things to make some great treats to have next to your seafood.
