You do not necessarily need a Forschner knife. Zwillig, Dexter Russel (My personal knives) Calcutta, and about a dozen more good blades are out there. I like my 8" best, just picked up a really nice Calcutta 6" last week, and I have a 10" that has many, many commercial fishing miles on it. And, I use the 8" most, and prefer it over the 10. The 10 I use for sharks, big tuna (Rare for me nowadays) and marlin (rare as well nowadays).

Those are great vids for people who want to shoot a seabass and have no idea what to do with it from that point on. Thanks for posting those up Eric.

Balta, you need a fillet table my man. Especially for a guy with a bad back. Call me and I'll give you one, I have a few. They look like this and they work a heck of alot better than that cardboard you're using.

you don't say.. My back was killing me. I actually have a bitching fillet board on my boat where I feel at home and am so comfortable filleting fish on. Unfortunately the knife never made it on the boat so not wanting to make a big mess on the boat after we came back while it's in my body shop, so I did it the card board way and with a dull knife

But you're right, there is nothing better than having a good fillet station. It even makes the fillet job that much better. I told Eric if he's gonna post a video than at least wait till I'm on my fillet board. That way I wont look like a rookie in front of Mr Hughes the master

I would love to see you filleting one day. Believe it or not I love to fillet fish. it's like an art to me and I even enjoy watching other great filleters with their different art and techniques as each one has a little different form. On my boat I'm the only one that ends up filleting all the fish and I enjoy it even after a whole day of diving.

What do you say we go for a dual one day J/K I'm sure you'll show a thing or two

I made a pretty bitchen custom fillet table that I keep on my boat/dock out of PVC and starboard. (maybe $40 total in materials) The best thing about it is that it his high enough (for a 6' person) that you do not have to lean over at all when cutting a fish. After cutting through 15-20 big fish your back starts barking if you have to bend over at all.

(edit for comment: I meant for cleaning 4 diver's fish, and if you have a proper table that is a little low and 'meant for sitting', your back will still get smoked)

It is kinda in the background of the attached pic...
