How to preserve a trophy

I recently came back from norway and caught a nice fish with my Rod. The head and filet was brought back in a freezer and i decided to preserve the fishs head.
Do you preserve any trophys of your caught fish and if yes, how you do it?

I just did a Gyotaku of a fish I recently shot. It can be done on canvas or rice paper. I thought it came out really well.

I never heard of this technique, but i googled it and it looks beautiful. Would you describe how it works? Perhaps you have a picture of your fish
