Got Crabs?

I don't know how we go out looking for flounders and wind up with an ice chest of big Male Blue Claw crabs.

You pull all the legs out at the joints, then cut the carapice in half longways with a butter knife. Then just dig the meat out the channels.

Yea...that's the way I've always done it. I just thought maybe someone has a secret weapon for getting it done faster. I wrap the claws up in a towel and crack them with a hammer and usually use a smaller utensil device to dig the meat out of the channels and claws.

Dirty jobs on the discovery channel had a really good episode on cleaning blue crabs. There was an old black lady there that had been there like 60 years and could clean a blue crab in a few seconds. I think their episodes are downloadable?? not sure.

Re: Got Crabs?

On Dirty Jobs, she was just removing the lump meat and leaving the rest to the grinder.

The best way I've found, is to split the crab in half. Twist off the swimming leg to remove the lump meat. Then split the half again 90° from the last split (parallel to the top of the crab). The second split opens up all the channels to make it easier to get the meat out.

After cleaning blue crabs all summer, I really look forward to Oct. 15.

Re: Got Crabs?

I saw someone cleaning crabs "down on the bayou" one time. The ripped of the top shell, scraped off the lungs, cut the main body in half, then fed the legs into a laundry wringer. The shell went through the wringer, and the meat didn't. Took about 5 seconds, very efficient and fast. I always wanted to try it, but haven't had an extra "round to-it".
