Best way to cook AJ and Cobia

I LIKE FRIED FISH, but smoked is ok.. so.. is there a secret recipe' that'll make me want to shoot either of the above? Cause as fun as they are to shoot, if I find a way ta cook 'em they're in a world a hurt!

Cube them in to 1" pieces.

Microwave a pack fo bacon until it's about 1/2 cooked.

Wrap each piece with 1/2 strip of bacon and toothpick it on.

Coat with italian dressing.

Grill in a basket until the bacon is cooked.

No secrets needed for great grilled AJ. Start out with start out with strips or chunks about an inch thick, salt and peper(a good amount of salt), a dash of olive oil and a dash of "good seansons" intalian dressing, Grill it for over high eat for just 2 minutes on each side, over cook and game over, but this is amazing eating right here. I have decided that Gulf AJs are awesome, atlantic AJ's I think I will pass, yes there is that much of a difference in my opinion.
