I just glide it around the fin bone - if the knife is sharp enough it will glide right around without have to cut.
As far as the as the meat on the top of the head, I cut out the entire backbone...

And the collar in the image is the one from this fish and I didn't use a serrated knife - just the sharp small one in the prior image.

Start at the vent (piss hole) and slide the knife up the belly to the Pelvic fins - stop here and you will have what I have in my previous image or cut thru/between the pelvic fins up to about half...
