any good dorado recipes?

I was just wondering if there was sex sauce kind of way to cook the mahi mahi? any good suggestions? usually i eat them raw or tadaki

Put lemon pepper on it. Sautee some garlic with half butter half E.v.o.o. stick the fish with the gaqrlic butter for 4-5 minutes a side and let it rest for about 5 more. Thats what I have been doing.

i used some evoo, salt and pepper then cooked it on the stove the other night and it was delicious.

Chop up onion, tomato, garlic, serrano pepper, cilantro. Cut dorado into 1 inch cubes. Salt and pepper to taste. Saute in butter till juices from veggies release. Add 1 cup white wine or marsala. Cover and cook for about 10 mins. Uncover and serve over rice or couscous. I stole this recipe from a mexican restaurant I used to work at in Cardiff.

Macadamia crusted. Put some macadamia nuts in a processor and grind medium. Season fish then press the macadamia on both sides. 4 minutes tops on each side on a sightly hotter then medium heat. Ta die for!
As said, hard to screw this fish up. Tacos are the bomb. I don't think I would smoke it though.
